Chocolate Chip Pecan Cookies

Cookies! Who doesn’t love cookies? The Holiday’s surely wouldn’t be the same without them! Many of us start our cookie baking early during the Holiday season and freeze them to be given as gifts to loved ones, or to have on hand for unexpected company. The recipe below is an all time favorite and freezes very well. Just a hint of almond gives them a unique and delicious flavor….it’s not your everyday chocolate chip cookie. Give these a try soon !

Vidalia Onion Dip

Vidalia onions are sweet onions grown exclusively in a 20 county region in Georgia.
Sadly, for onion lovers world wide, they’re only available from the end of April through about mid-November. ( Unless you had the foresight to store them properly, which I never have )
Luckily, with this sweet onions popularity, many other regions grow a reasonable facsimile, so any sweet onion can be substituted in this Vidalia dip recipe. Whether planning your Thanksgiving menu or you’re in need of an appetizer for a party, be sure to give this delicious dip a try!

Beef Tenderloin with Blue Cheese

Nowhere is it written that you must have a turkey ( or ham ) at Thanksgiving. This wonderful Holiday, which gives us a time to reflect on and count our blessings usually means family, friends, unexpected guests and is filled with traditions handed down for generations. That doesn’t mean we have to adhere to them 100%.

Personally, I prefer tradition…but a family vote years ago decided every other year we would do someone’s favorite dinner. This year, we will be having beef tenderloin with a delicious blue cheese sauce. ( I’m still bargaining for a turkey breast and Stove Top dressing on the side ).

If you’re inclined to go against the grain, try this wonderful tenderloin recipe!

Oatmeal Macaroons

It’s not too early to start thinking about the Holiday’s and cooking/ baking. Most grocery stores have major sales of everything you will need on a weekly basis, so the time to stock up is now…especially if you will be doing a lot of baking. Most cookies can be made way ahead of time and frozen for later use ( unless you have a cookie monster residing with you ). The following oatmeal macaroons recipe is not only easy, but freezes well in an airtight container. Try a batch this weekend….you might just add them to your Holiday baking list!

Cauliflower with Tomatoes and Onion

Ever tire of the same old vegetable side dishes? I know we tire of the standard corn, peas, green beans etc., and try to vary our vegetables often. Getting the little one’s ( and some stubborn older ones) to experiment is often an exercise in futility, but I’ve found if it looks appealing, they will not only try it, but actually enjoy it. The cauliflower recipe below has been a big hit around here for a long time…I just never mention to the stubborn ones they are eating cauliflower! This side dish goes very well with chicken, pork or seafood. It’s quick, easy and delicious…give it a try!

Fairbank Farms Beef Recall: E Coli

On October 31, 2009, Fairbank Farms issued a massive recall of it’s beef due to concerns over contamination.
Based in Ashville, N.Y., the company recalled over 545,000 pounds of ground beef.

According to USDA records, Fairbank Farms issued recalls of it’s ground beef/hamburger in September, 2007 ( 884 pounds ) and May of 2008 ( 22,481 pounds ). Those recalls were due to E Coli concerns and possible plastic contamination.

Two people on the east coast have died, 28 have been sickened and 16 remain hospitalized to date, and the CDC ( Centers for Disease Control ) are concerned that this beef may be the source of the E Coli outbreak. Two cases of hemolytic uremic syndrome have also been associated with this beef.
