I find fruit crisp to be one of the easiest and child friendly recipe’s around. Allowing your little one to combine their favorite fruits and end up with something so good is almost magical. Here is a recipe for fruit crisp that I think you and your little ones will love.
We have used fresh fruits as well as canned and I have combined both. Canned pie filling works, too. The recipe below calls for fresh fruit (apples, banana’s, cherries, plums, whatever you enjoy). When using canned fruit or pie filling, omit the lemon juice and cut the sugar by half.
You will need:
- 8 inch baking dish
- medium bowl
- pastry cutter or butter knife
- Child or 2 (optional)
- 5-6 Cups of fruit
- 2 Tbsp lemon juice
- 1/2 to 3/4 Cup sugar
- 11/2 Cup light brown sugar
- 1 Cup all purpose flour
- 1 Cup oatmeal (NOT instant)
- 1 tsp ground cinnamon
- 1/2 Cup butter (cut in pat size pieces)
- Pecan or walnut pieces (optional, and added to filling or topping)
Place fruit in baking dish. Sprinkle with lemon juice and sugar.
Combine the flour, brown sugar, oats and cinnamon in a bowl. Cut in the butter a bit at a time with pastry cutter (though a butter knife or fingers work well, too) and mix until it’s crumbly.
Sprinkle the mixture over the fruit and bake at 350 degrees for 30-40 minutes. It’s done when the
topping is golden brown.
Serve warm or cold with ice cream or whipped topping and enjoy!
