We love spinach in almost any form. The following is an easy to make and delicious variation of one of nature’s most healthy foods.

Baked Spinach Balls


You can serve these warm as a side dish and are also delicious as a party snack!

Baked Spinach Balls

In a Large mixing bowl:
2 packages of frozen spinach (10 oz. each)
2 medium onions, chopped fine or minced
1/2 tsp garlic powder
3/4 Cup butter, melted (may substitute margarine)
1 Cup shredded Swiss cheese
1/2 Cup Parmesan cheese
2 & 1/4 Cup Italian seasoned bread crumbs
4 eggs

Directions:
Cook and drain spinach.

In mixing bowl, beat the eggs and add breadcrumbs and onions. Add the cheeses, garlic powder and butter/margarine. Mix well, and add spinach and stir. Cover and refrigerate for at least 2 hours.

Remove from fridge and preheat oven to 350*.

Shape mixture into 1 inch balls and place on greased/oiled cookie sheet. Bake for about 25 minutes depending on your oven. Remove and let cool for 5-10 minutes. Enjoy!
