Pot Roast with Mushroom Sauce

I serve this with hot buttered noodles or mashed potatoes and a vegetable, usually asparagus or broccoli, along with hot biscuits. It’s full of flavor and quite hearty. Enjoy !

Pot Roast with Mushroom Sauce

You will need :
Large crock pot
Heavy skillet
Large mixing bowl

3-4# roast (inexpensive chuck roast turns out fantastic!)
1 envelope of dried onion soup mix (we use Lipton but any will do)
2 cans cream of mushroom soup (I prefer Campbells for this)
1 & 1/2 to 2 Cups of fresh mushrooms, button or sliced…your choice
12 oz. sour cream
1 &1/3 Cup water
meat tenderizer (I use Adoplhs)
garlic salt to taste (optional)
salt, pepper to taste


Add salt to skillet on high heat and quickly brown roast on both sides….remove. Pierce both sides with fork and sprinkle lightly with meat tenderizer, then place in crock pot.

In mixing bowl, add sour cream and dried soup mix, stirring well. Add ceam of mushroom soup, stir in water and fresh mushrooms. Salt and pepper to taste.

Pour mixture over roast and cook on medium high for about 3 hours. Reduce heat to medium low, and cook for 2-3 more hours. You may add carrots, potatoes and onions after the first 2 hours if desired. Roast is done when fork tender.
