‘Aio Oia’ loosely translated, stands for garlic and oil. The following dish is one that can be put together start to finish in 15-20 minutes. It’s ideal for those moments of unexpected company, or when the pantry is low.
Spaghetti Aio Oio is delicious, easily doubled and I’ve never had left-overs! By the way, this is also a tasty alternative to regular Spaghetti during Lent.
Spaghetti Aio Oio
You will need:
1# thin spaghetti
1/3 Cup extra virgin olive oil
2-3 cloves minced garlic
About 1/2 dried chili pepper diced extra fine (I substitute red pepper flakes suited to our taste)
Grated Romano (may substitute w/ Parmesan)
Parsley leaves or flakes to garnish (optional)
Cook spaghetti according to package directions.
Saute the garlic and pepper in the olive oil…turn heat off as soon as garlic begins to turn brown.
Drain spaghetti well when done, stir in the garlic pepper sauce and toss. Place in spaghetti bowl and garnish with parsley. I have also used a fresh diced tomato as a garnish.
Serve with grated cheese on the side and garlic bread. Have a glass of dry white wine and enjoy!
