I’m fortunate to have a family that loves vegetables, cooked or raw. However, I have a tendency to gravitate towards anything fried. We all know that is not a healthy decision … not to mention fattening!
When Zucchini fries became popular, I like so many others, decided there had to be a better way and over the years decided on the following recipe. It’s simple, fast, inexpensive and good for you!
You will need:
- Cookie sheet … non-stick
- wax paper
- cooking spray (I use Pam but generic works equally well)
- Large size plastic bag (Ziplock or other)
- 4 Tbsp. packaged herb seasoned bread crumbs
- 1 1/2 Tbsp. grated Parmesan or Romano cheese
- 1/8 tsp. salt
- 1/4 tsp garlic powder or salt
- 1/2 tsp onion salt
- 1/2 tsp. pepper (red or black)
- 3 med. size zucchini (I have also used yellow squash)
- 2 1/2 tsp. vegetable oil
- 2 1/2 Tbsp. water
Spray cookie sheet with cooking spray (be a little heavy handed doing this).
Oven must be very hot … preheat to 475 degrees.
On a large piece of wax paper, combine the breadcrumbs, salt, pepper and other seasonings along with the grated cheese.
Slice zucchini lengthwise, then quarter and slice in strips resembling french fries.
Place strips in plastic bag and add water and oil … close tightly and shake until zucchini strips are completely coated in oil/water.
Remove from bag and roll each strip in mixture on wax paper, place on cookie sheet … one layer should fill whole sheet.
Place in well preheated oven (do not cover) for 7-9 minutes. Might be a minute less or a minute more, depending on your oven, but when they are golden brown and fork tender, they’re done.
Remove, place on serving plate and serve plain or with your choice of any favorite sauce. Serve as a snack or a side dish with lunch or dinner. The grandkids actually like them with catchup !
Great way to get veggies into kids as well as adults, and it’s healthy, too!
