My family loves pasta, in any form, variation or recipe. It’s one of those foods that’s almost impossible to mess up or ruin. It’s also one of our ‘comfort’ foods.

 

Easy Linguini

 

The following recipe is easily doubled or tripled, but one that I keep as special for just 2; as in congratulations on that A in school…how about dinner with just Mom later tonight?   More than likely, you already have all the ingredients at your fingertips, too.

 

 
Easy Linguini For Two

You will need:

1/2 # linguini (fettucini or other noodle pasta)
1/2 teaspoon salt
Fresh ground pepper
4-6 cloves of garlic (your preference)
1 Tbls. Extra Virgin Olive oil (good olive oil is essential)
1/3 Cup fresh basil
1/4 to 1/2 Tsp red pepper flakes (your choice)
6-8 Roma tomatoes (wash and dice medium)

Directions:

Cook pasta according to directions, drain and set aside.

Add oil to skillet set on medium, med hi temp, followed by salt, pepper, pepper flakes and garlic…stir and cook about 1 minute, being careful to not brown the garlic. Add tomatoes and cook until just starting to soften…add basil, stir and cook about 1 more minute. Add pasta and toss…you’re done!

Divide equally on 2 plates and serve with garlic toast or warm Italian rolls. Garnish plate with fresh parsley or basil, add a few olives if you like them. 

Mushrooms, onions and grated cheese also go well with this dish, so do it ‘your way’ and enjoy!
