The following Vegetable Bake is but one of many, and with the economy in shambles, it isn’t just for Lent anymore! 


Vegetable Bake


This is easy, filling and nutritious and can be varied according to your taste. I really enjoy simple, one dish meals , especially when times are hectic!

Vegetable Bake
You will need the following:
Large casserole dish ( greased/oiled lightly )
1 Can tomato sauce ( 8 oz size )
1 Can chopped tomatoes ( No.2 size )
1 Cup oil
1 to 1 1/2 #’s of Zucchini squash ( washed and cubed )
1#  onions ( cut in wedges )
1 to 1 1/2 #’s potatoes ( washed and cubed )
Large head of cauliflower ( wash and cut in tiny pieces with stems )
1 or 2  Bell pepper ( your choice  ) I use 1 green, 1 red
2 Tbsp flour
Juice of 1 lemon ( or 2 Tbsp of lemon juice )
2 Tbsp dried mint
1 clove minced garlic
Salt, pepper to taste

Directions :
Simply combine all ingredients in casserole dish, stir well. Bake in a 350* preheated oven for about an hour and a half. Add favorite cheese ( shredded or sliced ) on top the last 15-20 minutes of cooking if you so desire.

Serve with warm bread of your choice ( we enjoy garlic bread with this ). May also be served over rice or pasta but is quite good alone.

green beans
broccoli florets
can of corn
choice of cheese

Use your imagination along with your penchant for your favorite vegetables. There is very little clean up involved here, so you can relax and enjoy!
