Baked potatoes are delicious – and easy. No need to plan and hour or two ahead,though. With this recipe, you have fluffy baked potatoes ready to eat in about 20 minutes.
I’m the queen of waiting till the last minute to prepare dinner. I’ve discovered a great way to have baked potatoes quickly. You use the microwave, but no one will ever know because these turn out fluffy and delicious.
Quick and Easy Baked Potatoes
1 potato for each person
PAM vegetable spray
salt/pepper to taste
Wash each potato. Spray lightly with Pam. Sprinkle lightly with salt and pepper. Wrap each potato individually with waxed paper, and place in the microwave. Microwave on high approximately 5 minutes per potato. Microwaves vary. So check the potatoes regularly to make sure they don’t overcook. You will know the potatoes are done when the potato yield to gentle pressure when you press against the sides. Take potatoes out of the microwave and immediately wrap each potato with aluminum foil. This step holds in the heat and moisture. Place the potatoes in a pan in the oven (set at 300) to keep warm until ready to eat.
