Who says you have to serve chili at a super bowl party! Below is is great substitute or addition, if you must have chili! How about some Superbow Lentil Stew!
Perhaps you are one of the many that love soups and stews … this one is easy to make, inexpensive to serve and you can come up with you own variations. Remember, too, that lentils are a great source of protein and iron!
Lentil Stew Recipe
You will need the following:
- Medium to large Crock Pot (recipe doubles easily)
- Medium to large frying pan
- 1 pound bag dried lentils
- 1 pound roll of sausage (we use mild)
- 1 medium to large onion
- 1 15 oz. can tomatoes (we use diced Italian)
Optional ingredients are:
- 2/3 C diced celery
- 2 C chopped potato
- 1/2 C diced carrot
- Onion powder, garlic powder, salt & pepper (all to taste)
- 2-3 cloves of garlic
- Grated Parmesan or Romano cheese
Rinse lentils (they cook fast so no pre-soak needed)
Cover lentils with water and and bring to boil in Crock Pot, then cook on medium-high for about 45 minutes
While lentils are cooking, brown sausage and chopped onions. Slowly add to Pot.
Add can of tomatoes and season to taste. If using any optional stew ingredients, add those now also.
Simmer until lentils are soft, stirring occasionally … time varies per Crock Pot.
Garnish with grated cheese and serve with Italian bread (or your choice)
This is also delicious served over rice.
Hint: Lentil Stew is one of those dishes that tend to taste better the next day, so I prepare mine a day ahead.
