Sweet Potato Souffle




I was lucky enough to marry into this recipe.  My mother-in-law shared it with me, and Thanksgiving and Christmas would not be the same without it.  It is absolutely the best sweet potato dish I’ve ever tasted.

It is so deliciously and decadently yummy that I have, at times, been known to have an extra serving of this sweet potato souffle instead of dessert.  One thing that makes it particularly wonderful is the crunchy topping. Your taste buds are approaching ecstasy with the creamy sweet potato mixture when suddenly you hit that sweet crunchy nutty topping, and it puts you over the edge. What can I say, but I look forward to the holidays just so I can taste this recipe again.



SWEET POTATO SOUFFLE’
3 cups mashed sweet potatoes
1 cup sugar
3 eggs
1/2 cup milk
1/2 stick margarine
1 Tablespoon vanilla
1/2 tsp. salt

Topping
1 cup brown sugar
1/2 stick margarine
1/2 cup self-rising flour
1 cup chopped pecans

Mix together the first seven ingredients, blending until smooth.  Spray a large casserole dish with a vegetable spray (Pam).  Then pour the mixture into the dish.  In a separate bowl, combine the topping ingredients and spread over the top of the potatoes.

Spread the topping evenly over the sweet potato mixture

Bake in a 350 degree oven until the topping is light brown and the potatoes are bubbly.  Makes 8 – 10 generous servings.
