I grew up eating salmon patties from time to time. Its an easy and inexpensive meal that is nutritious and delicious.
This is an old recipe that I found on a dog eared, stained recipe card. The condition of the card is enough to make me think the recipe was well used and is a good.
You can serve the patties as the main dish with a vegetable and potatoes on the side or you can make a more elegant dish with a good sauce and garnishes.
- 1 can salmon
- 1 egg, slightly beaten
- 1 tsp. lemon juice
- 1/8 tsp. pepper (or to taste)
- 2 tsp. parsley flakes
- 1 tsp. Worcestershire sauce (or to taste)
- 1/4 cup cracker crumbs
- 3 tbsp. butter or margarine (softened)
Mix all ingredients together. Make into patties and fry until thoroughly heated.
