Is there anything better then a pot of soup on a cold winter’s day? This recipe for Chicken Tortilla Soup can be made in your crock pot or slow cooker and is especially fun to make for families with kids.
If you work outside the home, then the crock pot or slow cooker is your friend. I use mine all the time and one of my family’s favorite meals is Chicken Tortilla Soup. It can be cooked all day and when you get home, just pull together some of the necessary toppings listed below the fold to make your dinner fun for the kids as well as tasty!
Chicken Tortilla Soup
2 14-ounce cans chicken broth with roasted garlic
1 14-1/2-ounce can Mexican-style stewed tomatoes, undrained
2 cups shredded cooked chicken (about 10 ounces)
2 cups frozen (yellow, green, and red) peppers and onion stir-fry vegetables
1 cup tortilla chips
Additional toppings (optional): guacamole, sliced fresh jalapeno chile peppers, grated cheese, fresh cilantro, sour cream.
1. In a 3-1/2- or 4-quart slow cooker, combine broth, undrained tomatoes, chicken, and frozen vegetables.
2. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-1/2 hours.
3. To serve, ladle soup into warm soup bowls and layer with toppings like cheese, avocado, fried tortilla strips (store bought is fine!) and a dollup of cilantro sour cream. And if you feel brave, top with chili peppers.
