Looking for a different kind of casserole to serve on a cold and snowy weekend? Try this beer potato casserole recipe!
This is quite popular with the hunters and snowmobiler’s I know and I’ve never had leftovers! That’s probably a good thing!

You will need:

9 x 13 baking dish
Tin foil
Cooking spray

1 can of beer ( NOT light )
1 # diced bacon
3 #’s Yukon or small red potatoes, sliced ( do not peel )
1 large Vidalia onion, sliced ( any sweet onion is ok )
1/2 stick butter, sliced
salt and pepper to taste
1 can of beer ( NOT light )

Directions:

Pre-heat oven to 350*

Spray baking dish well with cooking spray.
Layer bacon, onions and potatoes. Dot with butter, then salt and pepper.
Pour beer over layers, and cover with tin foil. Place in oven and bake about 50 minutes. Check potatoes for softness.

Remove from oven, let set a few minutes; serve warm and enjoy!
