Here’s a fantastic appetizer recipe that’s sure to delight and impress any guests, as well as your family.
It’s child friendly if you have older kids, clean-up is a breeze and there’s never any leftovers!
Give it a try next time you want to serve ‘something different’ at any gathering you might have!
You will need:
8 x 11 baking dish
1 can drained and diced Artichoke hearts
4 eggs ( medium-med.large )
2 Tbs virgin olive oil
1/3 Cup finely chopped onion
2 cloves minced garlic
1/3 cup bread crumbs ( I use seasoned, but plain works well, too )
1/2 cup cheddar cheese (I use sharp or medium sharp )
2 Tbs. fresh minced parsley
1/4 tsp. oregano
1/2 tsp. seasoned salt
pepper to taste
Pre-heat oven to 325*
Sauté onion in olive oil until softened. Beat eggs in a bowl, add artichokes, then remaining ingredients. Pour into a baking dish and bake 27-30 minutes. Remove and let set a few minutes. Cut into squares, serve and enjoy! Easy!
