We love our pasta around here…and really enjoy vegetables, too. The following vegetarian recipe is not only economical but scrumptious, and so very easy to prepare. It’s also child friendly if you have older children, and the clean-up is minimal. Doesn’t get much better than that!
Give this penne pasta and peppers recipe a try for a meatless, nutritious and delicious lunch or dinner!

You will need:

Large sauce pan ( for pasta )
Colander
Large skillet
Large slotted spoon
Cooking spray ( I use butter flavor Pam but generic is fine )

8 ounces penne pasta
2 large red peppers
1 large yellow peppers
2 large green peppers
1 large onion
2 Tbs. extra-virgin olive oil

1/2 tsp pepper
1/2 teaspoon salt
1 Tbs. sugar
3 Tbs. balsamic or tarragon vinegar
1 tsp. dried basil

Cook pasta in sauce pan according to directions on box. Drain and set aside

Wash, seed and slice peppers in 1 inch strips
Peel and slice onion

Place oil in skillet, then onions, peppers and salt and pepper.Suate until tender..about 12-15 minutes.
Add sugar, vinegar and basil; stir well.

Pour pepper mixture over pasta; mix well and serve with a tossed salad and garlic bread…delicious!

Note: Olive oil is important to this recipe, so please use extra-virgin. It doesn’t taste quite the same with plain olive oil!
