One of my most favorite meals growing up was corned beef and cabbage. I still remember my mom standing over a hot stove all day whenever she made it…and often thought better her than me! With the crock pot, though, you can put everything in it and walk away for a hours!
This simple and delicious recipe is melt-in-your-mouth tender when it’s done, and only takes a short time to prepare.
An added bonus is there is virtually no clean up!

You will need:

Large crock pot
Sharp knife
small bowl

2-3 # corned beef brisket ( cut to fit pot if necessary )
2 large onions, quartered
1 cup apple juice
1/3 cup brown sugar, packed
1 Tbs. orange peel, shredded
1 Tbs. prepared mustard
1/2 tsp. garlic powder ( optional )
6-7 whole cloves
1 head cabbage, cut in 6 -8 pieces
Salt and pepper to taste

Cut fat from brisket. Line bottom of crock pot with onions and place brisket on top.
Combine everything else but cabbage in small bowl and mix with spoon; pour over corned beef. Place cabbage wedges on brisket.
Cook for at least 12 hours on low. You can cut cooking time in half by cooking on high for 6 hours, but the corned beef MIGHT be a bit tough. It really depends on your crock pot.

Serve with a tossed salad, some skillet cornbread and enjoy!
