Penuche is fudge-like candy made from brown sugar, butter, and condensed milk. The only flavoring is vanilla extract and it is absolutely wonderful as well as simple to make. Be sure to give this pecan penuche recipe a try for Valentine’s Day, or any old day! You won’t be disappointed!
You will need :
2 1/2 or 3 quart microwavable bowl
8 x 8 buttered pan
1-1/2 cups chopped pecans ( substitute walnuts )
2/3 cup butter ( substitute margarine )margarine
1 cup light brown sugar, packed
1 can condensed milk
1-1/2 tsp. vanilla
Place butter in microwavable bowl and melt on low. Add milk and sugar; stir with wooden spoon until well blended.
Microwave uncovered on high 7 to 9 minutes. Stir 4 or 5 times while heating.
Mixture should be a medium caramel color once sugar has dissolved and it has thickened.
Blend with electric mixer on low until it mixture looks shiny and creamy.
Add pecans, mix until folded well into penuche.
Spread in buttered pan, cool and then refrigerate for at least 2 to 3 hours.
Cut in squares and enjoy!
Store in airtight container in fridge.
