We are just one week away from the Saints and Colts Super Bowl XLIV game on Sunday, February 7th, 2010. If you’re still planning your menu and looking for super bowl appetizers, you might enjoy this beer cheese dip…it’s delightfully delicious! It’s easy and inexpensive to prepare and goes quite fast so you might want to consider a double batch. Remember to use regular beer and not a *light* version!

You will need :

Medium mixing bowl
Electric mixer
Large, plastic spoon

1- 8 oz pkg. softened cream cheese
1 cup shredded cheddar or Colby cheese
1/4 cup beer ( not a light beer )
1/4 cup ranch dressing
1-1/2 Tbs.onion ( minced or finely chopped
Fresh parsley for garnish ( optional )

Mix cream cheese and ranch dressing together with mixer. Blend well.
Slowly stir in beer, onions and cheddar/Colby cheese. Chill for 3-4 hours ( or overnight ) before serving.
Place in serving bowl, garnish with parsley and serve with your favorite crackers or fresh veggies. Enjoy!
