If you’re having a Super Bowl Party this year and still looking for recipes for appetizers, dips, and salsa’s to go with the chips and crackers, give this easy black bean salsa a try. It’s not only scrumptious, but nutritious and so very easy to make. We usually do this one a day ahead to give the flavors more time to blend, but it works well as a last minute addition to your menu, too.
Even if you’re not having a party, this is a good salsa to have on hand when you have a snack attack!
You will need :
Large mixing bowl
1 can black beans, rinsed and drained
1/4 cup chopped, fresh cilantro
1 finely chopped jalapeno pepper( be careful )
1/2 cup diced red onion
1 large tomato, washed and diced
1/2 cup corn
1/3 cup red or green bell pepper, diced
Salt and pepper to taste
Juice of one lime
Combine all ingredients in large bowl, add lime juice and stir well. Taste and add more salt and pepper if needed. Pour in serving dish and serve with tortilla chips or any favorite snackers…delicious!
