Easy party snacks are a priority around here, especially during the winter. There are so many games to watch on the weekends and unexpected, but always welcome company!
I’ve learned to make some things, like spicy cucumber pickles on a Friday…just to have on hand. Not everyone likes spicy snacks so you might want to adjust the hot sauce. Then again, you might have guests that can drink Tabasco from the bottle and not flinch!
When I first made these… many moons ago, I used 4 tablespoons of hot sauce…OUCH! I now make a version that most folks can enjoy.
This recipe is simple, fast and quite tasty…give it a try soon!

You will need:

Sharp knife
Gallon size freezer bags ( the kind that zips shut )
Guests that really, really enjoy hot, spicy bites of food!

4 medium cucumbers
1/2 cup white vinegar
1-2 Tbs. Tabasco ( or your fave hot sauce )
2-1/2 Tbs. sugar
1-1/2 Tbs. coarse salt

Directions:

Wash cucumbers and slice thin. Place in freezer bag.
Add all ingredients and seal bag ( double check seal ). Shake a few times. Store in fridge for 4-5 hours.
When ready to serve poke a few holes in bottom of bag to drain. If you plan on having leftovers, save the brine in a fresh freezer bag. Place cucumber pickles in a bowl or on a tray and enjoy along with your other snacks!
