Looking for something warm and different to do with that leftover turkey or chicken? Hot turkey salad has been around for decades in the south and has become a leftover tradition for many.
This dish is quite easy to prepare and there’s very little clean up. Give it a try!

You will need:

Large bowl
Small bowl
Large slotted spoon
9 x 13 baking dish

2-1/2 cups of cooked turkey, diced bite size ( substitute chicken )
1 can water chestnuts, chopped
3/4 cup celery, chopped small
1/2 cup green pepper, diced
1/4 cup onion diced fine

2 Tbs. lemon juice
1 Tbs. chopped pimento
3/4 cup mayonnaise ( or more to taste )
1 tsp seasoned salt

4-6 slices cheese 9 I use Swiss, but cheddar and Colby are great too )
3/4 to 1 cup seasoned bread crumbs
1/4 cup melted butter


Mix everything but cheese, butter and breadcrumbs together in a large bowl. Place in a 9 x 13 baking dish.
Place cheese slices on top. Mix breadcrumbs with butter and sprinkle over cheese.
Bake in for about 35-40 minutes or until browned.
Remove, serve and enjoy!

Tip: If you like nuts, add 1/2 cup of chopped pecans or slivered almonds ( optional )
