Easy Christmas candy recipe’s are everywhere and below you will find ours for the easiest peanut butter fudge we know. The clean-up is minimal and this is a recipe you can play with, i.e, add nuts, etc…or use almond extract instead of vanilla. It’s all trial and error..I once used melted butterscotch chips instead of peanut butter and can assure you…do not go there!
Give this old stand-by a try…easy, fast and delicious. I’ll even let you borrow my friend’s delusion…the two minute cooking time cooks out all the calories!
You will need :
Medium heavy pot
Wooden spoon or whisk
8 x 8 pan
3-1/2 cups powdered sugar
2-1/4 cups brown sugar
1/2 cup butter
1/2 cup milk
3/4 cup peanut butter ( We use smooth )
1 tsp vanilla extract
1 tsp cocoa ( optional )
Place powdered sugar in large bowl.
Melt butter in medium pot using medium low heat. Gradually stir in milk and brown sugar. Boil for 2 full minutes, stirring ( or whisking ) often. Remove pot add vanilla and peanut butter. Stir until mixture is well blended.
Pour mix over the sugar and beat by hand or with electric mixer on low until batter is smooth. Pour into 8 x 8 pan and chill until firm. Cut into serving size of your choice and enjoy!
