Oh how we love our Christmas cookies! So many delicious treats and some delightful messes, we enjoy them all. I think the harder the recipe , the quicker we are to label it a Holiday or Christmas cookie..so we only have to make them once a year! The pecan cookie recipe below is quite easy and fast though. The only reason I make these during the Holiday’s is a body can only handle so much sweetness …and the Holiday season is usually the only time I have a never ending bag of pecans on hand!

You will need:
Large bowl
Wooden spoon
Cookie sheet
Cooking spray ( I use Pam )

1/2 cup butter, softened
1-1/2 cup packed brown sugar
1 egg
1 1/2 cup all purpose flour
1/4 tsp. soda
1/4 tsp. salt
3/4 cup chopped pecans

Directions:

Preheat oven to 350*
Mix egg, butter and brown sugar together. Add remaining ingredients and stir well.
Use a teaspoon and drop dough on cookie sheet at east 2 inches apart. Bake 12-15 minutes( depending on your oven )
Cool, serve and enjoy!

Tip: These also taste great with a bit of cream cheese or butter-cream frosting on top…just don’t frost until cooled completely.
