When you think of Holiday recipe’s, you don’t usually think raisin bran muffins, unless you’ve been around for many years. They are a holiday treat but of course can be enjoyed year ’round. The main reason most of us make them during the holiday’s is we are stocked up on all the spices this recipe calls for…no running to the store for a dash of nutmeg! This recipe keeps in a bowl for about 6 weeks in the fridge, so you can make as many or as little as you want every few days. Give them a try! They’re delicious and nutritious!

You will need:

Large bowl with tight fitting cover
Muffin pan
Muffin cups or cooking spray

1 15 oz pkg Raisin Bran ( I am partial to Post )
1 cup oil
5 cups flour
5 tsp soda
1 qt low-fat buttermilk
4 egg whites, beaten
2 cups sugar
2 tsp salt
¼ tsp clove
¼ tsp allspice
¼ tsp nutmeg
¼ tsp cinnamon

Mix all ingredients in a large bowl.
Store covered in fridge and use as needed.

Bake at 400* for 15-20 min. in greased muffin pan.

Makes 40 muffins
