Here is another budget friendly recipe that can be used for Holiday entertaining. Its a Refried Bean Dip. Its not the prettiest dip around, but it is a great hit at parties. Better yet, you probably already have the ingredients on hand, too.
Refried Bean Dip Recipe
You will need the following :
- 16 oz. can refried beans
- 1/2 jar of cheese sauce (mild, medium or spicy)
- 1/4 to 1/2 cup of salsa … again your choice of *hotness*
- One small or medium can of corn, drained
- one medium onion
Heat refried beans in microwave on 50% power for a few minutes … cover to avoid splatter. Add the cheese, corn and salsa and stir well. Heat again on 50% power for about 3 minutes. Remove, add chopped onions, stir and put in a dip bowl. We prefer it warm, but it disappears rapidly at room temp, too. Serve with tortilla chips of your choice and sour cream on the side. This also makes a great soft, vegetarian taco by adding fresh diced tomato and chopped green olives.
This is also easily made using a saucepan on a regular stove. Use your low, or simmer option to cook.
