Almost everyone I know appreciates good meatballs, including my oldest vegetarian daughter ( she uses fake meat but follows this recipe ). This is the easiest recipe I have for them. I know some folks just add onion soup mix to hamburger and roll it into the shape of a meatball, but that hardly counts in my book! Give this simple recipe a try…they are delicious in anything that calls for meatballs!

You will need:

1 or 2- 9 x 13 baking dish
Large mixing bowl
Large, lipped plate or pan
Tin foil
Cooking Spray ( generic is fine )

1- 1/2 # ground beef
1 large egg, beaten
3/4 cup quick cook oats (uncooked)
3/4 cup milk
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp dry Italian seasoning

3 Tbs flour
1-1/2 tsp paprika
1/2 tsp seasoning salt

Preheat oven to 400*

Combine first 8 ingredients; mix well and shape into 1-inch balls ( or smaller if you prefer )

Mix flour, paprika, and seasoning salt together on large lipped plate. Roll each meatball in flour mix; place on a lightly greased rack in a tin foil lined large pan. I use two 13 x 9.

Bake for 27 to 35 minutes. Remove and drain on paper towels. Add to your favorite sauce or serve plain with a dash of Parmesan sprinkled over them.

Tip: Meatballs freeze well … but only in an airtight container or freezer bag. Be sure to mark container with product name and date!
