Still have a bit of leftover turkey? Need a quick and simple recipe after a hectic day? This fiesta skillet dinner is easily made, especially when you already have cooked turkey on hand. Give it a try…in less than 20 minutes dinner can be on the table and you won’t be thinking “leftovers again”!!! ”

You will need:

Large, heavy skillet ( I use my cast iron ) with lid
Large spoon

1-1/2 Tbs veg. oil
2 cups cooked turkey, shredded
1/2 cup sun dried tomatoes,chopped ( substitute small can diced tomatoes, drained )

2 cups tomato juice
2 cups quick rice, uncooked ( I use Minute Rice )
1 can corn with green and red peppers ( don’t drain )
3/4 cup water

1 pkg taco seasoning mix
dash of garlic salt
1/2 tsp pepper
2/3 cup shredded Cheddar cheese
2/3 cup corn chips, crushed( I use seasoned generic )

Directions:

Heat oil in skillet on medium-high until hot. Add turkey and tomatoes. Cook on medium low, stirring,for 5-7 minutes or until turkey is hot.

Add tomato juice, rice, corn, water and taco seasoning. Stir until rice is cooked. Be sure to blend seasoning into mixture well. Bring to a boil and remove from heat.

Cover top with cheese, then cover skillet and let stand about 5 minutes or so. All liquid should be absorbed and cheese should be melted.
Top with corn chips and serve immediately. Enjoy!

Tip: Fresh ground turkey may be substituted for leftover turkey.
