Still have leftover turkey and not in the mood to cook the carcass for soup? Below is the easiest recipe I know for a delicious, nutritious soup and you probably have all the ingredients on hand. Give it a try!

You will need:

Soup pot or Dutch oven
Large spoon
Soup ladle

6 cups chicken broth
3 cups cooked turkey ( shredded or diced )
1 cup frozen peas
1 cup frozen corn
1 cup frozen green beans
1 cup frozen cauliflower and broccoli mix
1/2 tsp garlic powder
salt and pepper to taste
small bag noodles (your choice, I use wide )

Directions

Put all ingredients except noodles in saucepan. Cook over medium heat until soup is at boiling point. Stir occasionally. Add noodles and cook until done…about 12 minutes. Enjoy with a salad and bread of your choice!

Tip: This can be varied by substituting rice or potatoes for noodles.
If you have leftover carrots and celery, toss them in the pot, too.
