If you’re looking for an unusual and delicious stuffing recipe for Thanksgiving, this is one to try! I never realized how versatile cherries could be until I sampled this at the cherry festival a few years ago….what a delightful surprise!

You will need :

4 Quart casserole dish
Large bowl
Large saucepan
Cooking spray

4 Tbs butter (substitute margarine )
1 cup finely chopped celery
1 cup finely chopped onion
2 tsp dried thyme
1/2 teaspoon poultry seasoning
1 pkg. dried herb-seasoned stuffing cubes (14 oz.)
1-1/2 cups chicken broth
1 cup dried cherries
salt to taste

Directions:

Preheat oven to 350*

Lightly spray casserole dish with cooking spray

Melt butter in a large saucepan over medium heat. Add celery and onion; cook 2 to 3 minutes, or until vegetables are tender. Stir in thyme and poultry seasoning.

In a large bowl, toss together celery mixture, stuffing cubes, broth and dried cherries. Pour or ladle into casserole dish.
Cover and bake for 30-40 minutes.
Serve with any main dish and enjoy!

This can also be used to stuff a large ( 20+# ) turkey
