Vidalia onions are sweet onions grown exclusively in a 20 county region in Georgia.
Sadly, for onion lovers world wide, they’re only available from the end of April through about mid-November. ( Unless you had the foresight to store them properly, which I never have )
Luckily, with this sweet onions popularity, many other regions grow a reasonable facsimile, so any sweet onion can be substituted in this Vidalia dip recipe. Whether planning your Thanksgiving menu or you’re in need of an appetizer for a party, be sure to give this delicious dip a try!
You will need :
8 x 10 baking dish
large bowl
skillet
whisk
2 1/2 cups Vidalia onions, chopped fine
1 3/4 cup mayonnaise ( I use Hellmans’)
2 cups Swiss cheese, shredded
8-10 slices bacon (1/2 cup ), fried crisp and crumbled
1 tube of crackers, crushed fine for topping ( Ritz or saltines )
Directions:
Fry, drain, cool and crumble bacon ( at least 1/2 cup )
Preheat oven to 350*
Mix all ingredients in bowl, pour into medium casserole dish. Bake for 30-35 minutes. Let stand for 10
minutes.
Serve warm with your favorite snacker. Goes well on chicken nuggets and meatballs, too. Enjoy!
