Sometimes there’s nothing like a nice hot cup of tomato soup to ease the strain of a long and busy day. Many times, I just opt for a can, yet other times, I want that old time tomato soup that Mama used to make on cool and dreary days. It’s so easy I often wonder why I don’t make it more often, then remember that it does take an hour. Since it simply has to simmer that long with just an occasional stirring, I use that hour to pick up the house, run the vacuum or do a load of laundry….the hour goes by fast and I/ we are rewarded with a cup or bowl of fresh and delicious soup. Try it sometime!
You will need:
2 quart heavy saucepan with lid
Large spoon
2 cups whole milk
1 large can diced tomatoes - 28 oz size
1 cup chicken broth ( I use Swanson’s when out of homemade )
1/3 cup butter
2- 1/2 Tbs sugar
1-1/2 Tbs onion, finely diced
1/8 tsp baking soda
1/2 tsp seasoned salt
dash or 2 of pepper
Combine everything BUT milk in saucepan. Cover and simmer
for at least 1 hour. Stir occasionally.
Heat milk, and add to mixture . Simmer a minute or 2, and serve immediately. Goes well with any bread, cracker or sandwich. Enjoy!

I never thought about making homemade tomato soup, but i bet this one is good.

Lylia is right, it does sound yummy
