If you’re looking for a fast and filling lunch or dinner recipe, you might enjoy the cabbage sloppy joe recipe below. I’m fortunate in having a family that loves all vegetables, including cabbage and this recipe is no exception. I learned this one from a friend out west…I have used cole slaw as a topping on sloppy joes and BBQ, but never considered cooking cabbage in with the hamburger. Be sure to try this unique version! It was quickly added to our family favorites! This also has the added benefit of minimal clean-up!

You will need:

Large, heavy skillet with lid ( cast iron is great for this )
Large spoon

1 # ground beef
1-1/2 cups finely shredded cabbage
1 medium onion, chopped
1 stalk celery, diced
1/2 cup green pepper, diced

1 cup catsup ( any brand )
3 Tbs brown sugar
2 Tbs lemon juice
1 Tbs white vinegar

1 Tbs Worcestershire sauce
1 Tbs prepared mustard
1 tsp salt ( regular or seasoned )
Dash or 2 of pepper

8 Kaiser rolls or hamburger buns, split

In a large skillet, cook the beef, cabbage, onion, celery and green pepper over medium heat until meat is no longer pink and vegetables are crisp-tender; drain.

Stir in catsup, brown sugar, lemon juice, vinegar, Worcestershire sauce, mustard, salt and pepper.

Cover and simmer for 10-13 minutes or until cabbage is tender.
Spoon about ½ cup onto each roll. Serve with a salad, a side dish, chips…whatever you choose, and enjoy!
