We quite enjoy the many flavored butters and dips available on the market and especially the seasonal ones. However, we also like pumpkin and pumpkin butter can be hard to find after fall, hence the easy recipe for pumpkin butter below. If you’re a pumpkin lover give it try…you might be pleasantly surprised! It’s a big hit at parties, too!
You will need :
medium airtight container
2 sticks butter ( unsalted )
1/4 cup canned pumpkin ( solid packed..not pie filling )
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/2 teaspoon cinnamon
1 Tbs sugar
pinch of salt ( optional )
Soften butter to room temp.
Heat pumpkin in saucepan using medium heat. Stir constantly for about 2-2 1/2 minutes. Pumpkin should dry out…set aside until cooled.
Add allspice, cinnamon, nutmeg and sugar to pumpkin…blend well by hand.
Fold into softened butter, mix well. Use immediately or store in airtight container for up to 2 weeks in refrigerator. Bring to room temp before serving after refrigeration.
Delicious on any warm bread, bagels, and croissants. Enjoy!
