It’s apple time! While popular year ’round, we tend to go overboard during apple season here in the mid-west. Apple cookies, candied apples, apple pie…you name it, we cook it! Not only are apples nutritious ( and almost everyone likes them ) baking/cooking them leaves such a wonderful aroma wafting through the house that we cook them as often as we can. Try this easy cinnamon baked apples recipe below to have a delightful dessert in less than an hour…it’s sure to please the entire household!

You will need :

11 x 9 baking pan
small saucepan

6 large apples ( we use tart apples )
3 1/2 Tbs lemon juice
1 & 1/3 cup apple juice
1 & 1/3 cup packed brown sugar ( light or dark )
4 Tbs butter- softened ( substitute margarine )
1/2 tsp cinnamon
Dash of salt
pinch of nutmeg ( optional )

Preheat oven to 375*

Peel, core and cut apples into thick slices, place in ungreased 11 x 9 baking dish. Drizzle with lemon juice; sprinkle lightly with salt and toss to coat. Set aside.

Combine apple juice, brown sugar, nutmeg, butter and cinnamon in saucepan. Cook and stir over medium low heat until sugar is dissolved. Pour over apples.

Bake for 20-25 minutes. Apples should be fork tender. Remove from oven, let sit about 5 minutes. Spoon into dessert cups and top with whipped topping or ice cream if desired. Enjoy!

Note: We occasionally top with warm caramel sauce and crushed pecans or raisins. Delicious!
