If you enjoy Italian food, you might like like this quick and easy version of peppers and sausage. In less than an hour, you can have a sauce that tastes and smells like it has been cooking all day. It’s wonderful over any pasta and easily adjustable to suit your taste. Give it a try!

You will need:

Large, heavy skillet ( I use my cast iron )
Large pot
colander

1& 1/2 #’s ground Italian sausage ( I use sweet/mild, but it’s your choice )
1 & 1/2 tsp olive oil
1 medium red pepper, washed, seeded and sliced
1 medium green pepper washed, seeded and sliced

1 large onion, sliced
1 can Italian style diced tomatoes ( 15oz. size )
1 cup chicken broth ( I use Swanson )
5-6 Tbs tomato paste
2 &1/2 Tbs sugar
1 & 1/2 tsp basil
1/2 tsp garlic powder
1 box linguine( or pasta of your choice-16 oz. size )
grated Parmesan ( optional )
Directions:

Heat olive oil in skillet. Add sausage, peppers, onion and cook on medium until sausage is done. ( no pink ) Drain excess oil from skillet.

Add the tomatoes, tomato paste, sugar, broth, garlic powder and basil. Stir well and simmer for about 10-12 minutes.
Cook linguine according to pkg directions, drain when done and place in serving bowl.

Top with this delicious sauce and sprinkle with Parmesan if desired.

Serve with tossed salad and garlic bread. Enjoy!
