Just when you think you know every quiche recipe invented, along comes another! My daughter made this over the weekend and it is quite delicious! Kid friendly and very little clean-up, too.
Give it a try, and be sure to personalize it with your favorite topping!

You will need:
large skillet
large cookie tray
medium bowl
toaster
tin foil
cooking spray

8 frozen waffles, toasted lightly ( I used Eggo, but any frozen waffles are ok )
1 & 1/2 cup shredded Swiss cheese ( or cheese of your choice )
3/4 cup fried crispy, crumbled bacon (about 8 strips)
3/4 cup beaten egg ( about 4 large eggs )
3/4 cup plain yogurt
1/2 cup sliced green onions
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp pepper

Directions:

Preheat oven to 350*

Fry bacon until crispy, drain, cool and crumble
Line cookie tray with tin foil, spray with Pam ( generic cooking spray is fine )

Toast waffles lightly, place on tray and top with bacon and cheese.
In medium bowl, combine all other ingredients and distribute evenly over each waffle.
This can be done with a spoon or place egg mixture in large measuring cup and pour over waffles.

Bake 25-30 minutes or until waffles are browned and egg mixture has set.
Serve immediately and enjoy!

Note : Low fat ingredients may be substituted.
