Casseroles! Most people either love them or absolutely hate them! Some folks, young and old alike, just don’t like their food *touching* other food. I personally think the disdain for casseroles is the over-use of tuna noodle casserole many years ago…. so many of us are guilty of that. Fortunately, I enjoy most of them as do the kids and grandkids and one of our favorites is the chicken noodle recipe below. It’s a delicious way to use up left-over chicken and takes very little time. Try it out, and don’t be afraid to add your own personal touch!

Fortunately, I enjoy most of them as do the kids and grandkids and one of our favorites is the chicken noddle recipe below .It’s a delicous way to use up left-over chicken and takes very little time. You will need:

13 x 9 baking dish
large pot
large microwavable bowl
colander

1 bag wide egg noodles ( 12 oz size )
1 can cream of mushroom soup
1 can cream of chicken soup
3 cups cooked, chopped chicken
1/2 cup sour cream
1&1/2 cup seasoned bread crumbs ( substitute crushed potato chips )
1/2 cup milk
3/4 cup shredded Colby-Jack cheese ( or your favorite cheese )
salt and pepper to taste

Directions:

Preheat oven to 325*
Cook noodles according to package directions. Drain and set aside when done. Add chicken, milk, soups ( do not add water ), and sour cream in large microwavable bowl. Cook on reduced power, stirring every couple of minutes until thoroughly heated. Stir in cheese after mixture is blended and hot.
Pour mix over noodles in pot, stir well. Add salt and pepper .

Place in baking dish and top with bread crumbs or crushed potato chips. Bake for 30-35 minutes.
For crispier topping, place under broiler for about 5-7 minutes.

Sprinkle with a bit of shredded cheese prior to serving and garnish with fresh parsley if desired.
Serve with a tossed salad and hot biscuits…enjoy!
