Does your family ever tire of the same old side dishes? Do you ever wish there was more you could do with potatoes than mash, fry or bake them? If so, then try the delightful and tasty potato recipe below…especially if you’re fond of blue cheese and bacon.
If you’re only feeding 3-4 people, simply cut the ingredients in half.
You will need:
Large heavy skillet
4-5 #’s red potatoes, washed and cut into bite size chunks ( 12-14 potatoes )
2/3 cup sour cream
2/3 cup mayonnaise
1/2 to 3/4 cup crumbled blue cheese
1 # bacon (about 16-18 slices)
1/2 tsp. garlic powder
1/2 tsp. black pepper
1 Tbs. chopped parsley ( fresh is best )
salt to taste
Fry bacon until crispy, drain on paper towels, cool and crumble.
Cover potatoes with water and bring to boil. Reduce heat to medium and cook until fork tender. Usually takes 15-20 minutes max.
Combine sour cream and mayonnaise in bowl and mix well with spoon. Add blue cheese crumbles and stir by hand until well blended.
Drain potatoes in colander and return to pot. Add garlic, salt and pepper. Carefully stir in blue cheese mixture, add bacon, parsley and toss lightly. Garnish with a few parsley sprigs if desired. Place in serving dish and serve hot with your favorite main meal. Enjoy!
