It’s sweet potato time! Not sure why folks don’t eat them throughout the year, but we seem to zero in on fall and the holidays for this delicious and nutritious potato. Below is an easy and fast sweet potato recipe that can be used as a snack or served with any main meal. Try it soon! It might just make you want them more than a few times a year!

You will need:

9 x 13 baking dish
Oven mitt
Small spatula

3-4 medium sweet potatoes
3 Tbs vegetable cooking oil
1/3 Cup sugar
1-1/2 tsp cinnamon
3/4 tsp salt

Directions:

Preheat oven to 400 *.
This is so easy…simply peel potatoes and cut in slices…at least 1/4″ thick. Heat the oil in the baking dish for 4 or 5 minutes, then remove from oven. Place the slices in a single layer in the dish and bake for 10-12 minutes. ( ovens vary )

Remove from oven, turn potatoes over and carefully sprinkle with salt, cinnamon and sugar. Return to oven for about 20 minutes ( they’re done when browned on top ).

Drain on paper towels, place on platter and serve while still warm. Delicious!
