Cold, rainy days just scream soup! ( Or stew ). Below is a family favorite that’s not only quick, it’s delicious! Vary the vegetables and seasonings to suit yourself or family. You probably have all the ingredients on hand, so give this a try when you want a hearty, filling and fast hot meal!

You will need:
5-6 quart heavy pot or Dutch oven
Large spoon
Soup ladle

1 Tbs butter
1 &1/3 cup chopped onion
5 cups chicken, skinned and diced bite size ( I use 2 1/2- 3 #’s boneless breasts )
1 Tbs Worcestershire sauce
1 tsp powdered mustard
1/2 tsp pepper
1/2 tsp garlic salt
2 cans stewed Italian tomatoes ( 14-15 oz size )
3/4 cup green beans
1/2 cup frozen peas
1/2 cup frozen corn
5-6 medium, peeled potatoes, cut in small chunks
5 1/2cups hot water

Salt and pepper to taste

Directions:

Heat margarine in saucepan until melted; add onion and saute until soft. Add chicken and cook on all sides until browned.. Add Worcestershire sauce, mustard and pepper and garlic salt. Stir in hot water and both cans of tomatoes.
Bring to a boil. Reduce heat to low ( simmer ), cover and cook for about 30 minutes. Add green beans, peas, corn and potatoes. Cook on low another 15-20 minutes until potatoes are fork tender.
Serve with cornbread, garlic toast or your favorite bread and enjoy!

Note: For stew, add less water.Thicken with 2 Tbs of cornstarch or flour.
