We are a family of chicken lovers and I often buy it in bulk on sale. Our grocery has the large bags of skinless, boneless chicken breast at 2 for 1 prices at least twice a month and we always take advantage of it. In the summer, it’s mostly BBQ chicken or chicken tenders but as the seasons change, so does the cooking. The recipe below is easy as well as delicious and nutritious…not to mention the delightful aroma spreading through the house. Give this one a try sometime!

You will need :

medium saucepan
wooden spoon
9 x 13 baking dish
cooking spray ( generic works well for this )

2 1/2 Tbs brown sugar
1 Tbs cornstarch
1/4 Cup melted butter ( substitute margarine )
Large can (16oz ) crushed pineapple ( do not drain )
1/4 cup soy sauce ( any brand )
1/4 tsp ginger
1/3 tsp garlic powder
1/2 tsp seasoning salt
6 chicken breast halves. skinned, boneless
Directions:

Pre-heat oven to 350*

Place sugar, cornstarch, pineapple, soy sauce garlic, salt and ginger in saucepan. Cook on low heat, stir until thickened.

Put chicken in greased 13 x 9- baking dish. Drizzle chicken with melted butter. Pour half of the sauce over chicken.

Bake for 20 minutes…do not cover dish. Baste with remaining sauce and bake 10-15 minutes more. It’s done when chicken juices run clear.

Remove from oven, place on serving platter and enjoy with any of your favorite side dishes. Garnish with fresh parsley if desired.
