With fall season underway, it’s time to start thinking parties! That usually means delightful and assorted fondues; almost everyone has a favorite and the recipe below is one of mine. Fondues are great for intimate settings as well as sports and holiday parties, and new ones seem to be invented everyday. Give this one a try if you’re a fan of strong and delicious flavor!

You will need:

Fondue pot

3 & 1/2 cups shredded cheese ( Monterey Jack, Colby or blended )
2 Tbs flour
1/2 pkg frozen spinach…chopped, thawed and drained of all liquid ( about 5 oz. )
2/3 cup regular beer
1 can artichoke hearts, drained and chopped
1/2 tsp salt
1/4 tsp seasoning salt
1/4 tsp white pepper ( substitute red or black )
1/2 tsp garlic powder

Directions:

Add beer to fondue pot and bring to a boil on medium heat. Once it begins to boil, turn heat to low and add cheese and flour slowly, stirring while adding. Continue to stir just until cheese is melted..do not boil.

Stir in artichokes, spinach and all seasonings and cook for about 10 more minutes, or until completely heated through.
If mix is too thick, add a bit more beer….slowly.

Place fondue pot on lit burner, serve and enjoy! This is especially terrific on shrimp and pieces of chicken or pork.
