I grew up in the Pop-Eye era back when children believed everything they were told, and loving Pop-Eye enabled me to eat spinach at an early age and enjoy it. It’s not so easy anymore to convince children that green food is good for you, hence all the spinach recipes over the years. My Aunt used to make baked spinach with Swiss cheese as a treat…my how we were were easily fooled! One of our family favorite’s is below; give it a try sometime, especially if you have one or two of those picky eaters!

You will need:

Dutch oven or large heavy saucepan with lid
large baking dish ( 9 x 13 )
wooden spoon

cooking spray ( we use Pam )
2 # fresh spinach
2 large onions, diced
1/2 tsp salt
1/2 tsp seasoning salt
1/2 tsp pepper
1/2 # butter ( substitute margarine )
2 tsp paprika
1/4 tsp nutmeg
3-4 garlic cloves, minced
1# grated Swiss cheese

Directions:
Preheat oven to 350*
Generously grease baking dish ( sides, too )
Carefully wash spinach and dry ( paper towels work well or a clean dish towel )
Once dry, tear or cut spinach in strips ( this can be fun for the kids )

In Dutch oven or large pan, heat butter until hot. Add garlic and onions, cook for 2-4 minutes, stirring to make sure garlic does not brown. Add spinach and salts, cover and cook on medium for 5-7 minutes.
Turn off heat.
Sprinkle half the Swiss over the bottom of baking dish, add spinach, then carefully sprinkle pepper, nutmeg and paprika on top. Cover with remaining cheese. bake for about 25-30 minutes, or until the cheese starts bubbling.

Remove from oven and let sit 5-10 minutes before serving. Goes well with any main entree. Enjoy!

Note:
This is quite delicious as a topping on garlic toast, too.
