Pork roast and sauerkraut cooked in apple juice…it’s not just Sunday dinner anymore! Turn an inexpensive smoked pork butt into a delicious and tender meal in a few easy steps…all you really need other than ingredients is a large Dutch oven or roasting pan with cover. Give this easy to prepare and delightfully tasty recipe a try next time you ask yourself “what’s for dinner?”
You will need:
5-6 quart dutch oven or large roasting pan with cover
large bowl to hold veggies
2-3#’s smoked pork butt
2 Cups apple juice/cider
Large can or bag of sauerkraut ( 16 oz )
1 Large bay leaf
4-6 medium onions
4 apples peeled, cored and cut in slices ( optional )
1/2 tsp garlic powder
1/2 tsp seasoning salt
1/2 tsp black pepper
Place pork in Dutch oven, add sauerkraut, apple juice and bay leaf. Cover and simmer for at least 1 hour.
Wash, peel and cut veggies in chunks.
Add potatoes, carrots and onions, sprinkle salt, garlic and pepper over veggies and simmer covered…. about 50 minutes ( until tender).
If using oven, set temp at 350*
When done, place pork on serving platter, use slotted spoon to place vegetables around meat and serve with hot biscuits or cornbread. Enjoy!
