Below is an old but child friendly cookie bar recipe that has as many variations as it does names. Corn flake cookies never appealed to my children, but anything named flaky or crispy sure did!
This is fun to make with an older child, since it actually involves using the stove. There’s little clean-up, they’re delicious, economical and quick to make. Make some this weekend if you have the time!

You will need:

9 x 13 pan
large saucepan
wooden spoon

3 cups crushed corn flakes ( generic is fine )
1/4 cup brown sugar ( light or dark )
1/2 cup light corn syrup ( I use Karo )
1 tsp vanilla extract
1 cup peanut butter

Bring brown sugar and corn syrup to a boil over medium heat. Remove from stove and stir in vanilla and peanut butter. Slowly fold in corn flakes…mix well with wooden spoon. Spread into a 9″x 13″ pan.
Chill until set, then cut in squares to serve and enjoy!

Store in airtight container.
