Rice pudding to many folks is considered comfort food, not just dessert. It’s supposed to cure what ails ya, so to speak. While I admit I prefer regular rice, after changing ingredients around a bit, I decided that this rice pudding made with minute rice was great in a comfort food emergency. Give it a try sometime. Adjust raisins and sugar as desired.

You will need:

Large heavy saucepan
Wooden or plastic spoon

4 Cups whole milk
1 Cup minute rice
1/2 Cup raisins ( less if you aren’t that fond of them )
1 Tbs sugar ( optional )
1 egg, ( beat well )
1 small pkg. coconut cream pudding and pie filling ( substitute vanilla )
dash nutmeg
dash or 2 cinnamon

Directions:

Combine milk, rice, pudding mix, raisins and egg in saucepan. Cook on medium heat and stir occasionally until mixture comes to a boil. Remove from heat.
Cool about 5 minutes, stirring a couple of times. Pour into serving bowl or individual dessert dishes. Sprinkle with cinnamon and nutmeg. Serve warm and enjoy!

Tip: It’s great cold, too
