Ever tire of the same old fruit salad served at BBQ’s or get-together’s? Want to try something healthy and delicious? Give this old tried and true fruit medley a try…you’ll not be disappointed! It’s a wonderful make ahead recipe!

You will need:

Small saucepan
Wooden or plastic spoon
Large serving bowl

1 can (20 oz) pineapple chunks
¼ cup lemon juice
1/3 cup sugar
1 egg, beaten
1 egg yolk
3 oranges, peeled and sectioned
1 large apple, chopped
½ lb seedless grapes, halved
3 bananas, sliced
1 cup chopped pecans

Directions:

Drain pineapple, reserving ½ cup juice.

Combine pineapple and lemon juices, sugar and eggs in saucepan

Cook on low, stirring constantly until thickened. Chill thoroughly.

Combine fruits and nuts in serving bowl; pour dressing over all. Toss lightly and enjoy!
