Yes I know…. Chicken Cordon Bleu ( Blue Ribbon Chicken ) and the word casserole should never appear in the same sentence…BUT…this is the only way I know of to give the taste of Chicken Cordon Blue to the whole family without spending hours in the kitchen. So many of us not only budget our money, but our time as well and this easy to prepare, filling and delicious dish should please everyone in the family.
The cheeses and spices may be adjusted to your taste along with the amounts. Give this a try when you’re looking for something different to do with chicken, and don’t have the time and patience to make individual Chicken Cordon Bleu.

You will need:

Large, heavy skillet
9 x 13 or 7 x 11 baking dish

4-6 boneless chicken breasts, flattened
2-3 tablespoons cooking oil
1/2 # thinly sliced ham
1/2 # shredded Provolone or Swiss cheese
3/4 tsp garlic salt or seasoning salt
1/tsp pepper
3/4 Cup seasoned bread crumbs
1 1/2 Tbs Parmesan cheese


Preheat oven to 325*
Pound chicken with meat mallet until flattened. Salt and pepper both sides. In skillet, heat oil on medium, add chicken. Cook until brown ( 3-4 minutes each side ). When browned, remove and drain on paper towel lined plate.
Place chicken in baking dish and cover with sliced ham, sprinkle shredded cheese over the ham. Mix the Parmesan with the bread crumbs and sprinkle over cheese. Bake uncovered for 30-35 minutes.

Serve hot with your favorite side dish, a small tossed salad and fresh, hot dinner rolls. Enjoy!

Tip: Add a smidge of Dijon mustard to the ham before adding the cheese for a completely different taste.
