After making lazy cake yesterday, the grands wanted to make dessert again today. Below is one of the easiest, kid friendly recipe’s we’ve ever used. Again, the bonus is minimal clean-up, and very happy youngsters. Give it a try…it’s especially enjoyable to make on cool, rainy days when the kids really want to be outside.

You will need:
2 quart casserole dish
Cooking oil or vegetable/butter spray

1 can cherry pie filling
2 Tbs. butter ( substitute margarine )
1/2 cup quick oatmeal
1/4 cup all-purpose flour
1/2 cup sugar
1/2 tsp. almond extract
1/3 Cup chopped pecans ( substitute walnuts )

Preheat oven to 350*

Butter or oil casserole dish . Pour in cherry filling and stir in almond extract. Mix flour, oatmeal, pecans, and melted butter until well crumbled. Sprinkle over cherry pie filling and bake for 20 to 25 minutes. Serve warm or cold…add whipped topping or vanilla ice cream if desired.
Enjoy after any meal! ( Makes a great midnight snack, too )
